This is a great tasting and nutritious chili. It’s quick and easy to make and it will help keep you on the right track to healthy eating.

  • 1/4 Tablespoon (15 mL)of Canola Oil
  • 3/8 Cup (240 g) of Chopped White Onions
  • 1/2 Can (4 Oz or 113g) of Chopped Green Chile Peppers
  • 1/4 Teaspoon of Dried Oregano
  • 1/4 Teaspoon of Ground Cumin
  • 1/16 Teaspoon Cayenne Pepper
  • 1/2 Can (15 Oz or 425 g) Great Northern Beans, Rinsed and Drained
  • 1 Cup (946 mL) Reduced-Sodium Chicken Broth
  • 1 Cup (560 g) Cooked Chicken Breast, Diced
  • 1/2 Tablespoon (30 mL) Apple Cider Vinegar

Heat the canola oil in a large pot or Dutch oven over medium-high heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes.
Stir in the Chile peppers, oregano, cumin, and cayenne pepper. Cook, stirring occasionally, for 5 minutes.
Stir in beans and broth, and bring to a simmer. Cook, stirring occasionally, for 20 minutes.
Add the chicken and vinegar; cook for 5 more minutes.
Serve and enjoy!
