Stage III: Smooth & Mushy

The fresh mint gives the soup a fresh, aromatic flavor.

  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 14 oz. can reduced sodium chopped tomatoes
  • 1 14 oz. can lentils, rinsed and drained
  • 2 1/2 cups low sodium vegetable stock
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Mrs. Dash salt-free seasoning blend
  • handful of fresh mint or parsley leaves, chopped
  • Cooking spray

Spritz a large saute pan with cooking spray. Add the onion and garlic and cook until softened, 3 to 5 minutes.

Add the chopped tomatoes and their juices, the lentils, the mint or parsley, vegetable stock, pepper and seasoning blend. Bring to a boil, reduce the heat to maintain a simmer, cover, and simmer for 15 to 20 minutes.

Puree in a blend to serve smooth.
