Spinach Lasagna

Ingredients
  • 1 10-oz. package frozen chopped spinach
  • 1 tablespoon canola oil
  • 1 medium onion, chopped
  • 8 oz. fresh mushrooms, sliced
  • 2 8-oz. cans salt-free tomato sauce
  • 1/2 teaspoon basil
  • 2 teaspoons oregano
  • 9 whole-wheat lasagna noodles
  • 1 lb. low-fat (1%) cottage cheese
  • 2 tablespoons Parmesan cheese
  • 4 oz. part-skim mozzarella, shredded (1 cup)
Directions

Preheat oven to 350 degrees F.

Cook spinach, drain well. Heat oil and saute onions, garlic and mushrooms until onions are soft. Add sauce and seasonings; simmer for 5-10 minutes.

Cook noodles 15 minutes in 2 quarts boiling water. Mix cottage and Parmesan cheese until smooth.

In an 8 1/2″ x 12″ pan, layer 3 noodles, 1/2 spinach, 1/2 cottage cheese mixture, 1/3 sauce and 1/3 mozzarella. Repeat layers.

Bake 30-35 minutes. Let stand 3 minutes before serving.
