Roasted Asparagus

Asparagus is low in calories, an excellent source of folic acid, and contributes dietary fiber, potassium, and many essential vitamins to the diet.

  • 1 1/2 pounds fresh asparagus
  • 1 tablspoon extra-virgin olive oil
  • 1/4 teaspoon Mrs. Dash salt free seasoning blend
  • as needed, fat free cooking spray

Preheat oven to 400° F. Wash asparagus and break off tough ends.

Lightly oil baking dish with cooking spray.

Place asparagus in baking dish, drizzle with olive oil and sprinkle with Mrs. Dash.

Roast the asparagus for approximately 10-15 minutes, until tender but still crisp.
