Hearty Turkey Chili

This hearty turkey chili is the perfect meal for a cold winter day. A tasty blend of lean ground turkey breast with vegetables, kidney beans, chick peas and zesty seasonings, it is low in saturated fat and cholesterol and contains lots of heart-healthy fiber.

  • 2 tablespoons olive oil
  • 2 tablespoons fresh garlic, chopped
  • 2 cups onions, chopped coarsely
  • 1 1/2 cups celery, chopped coarsely
  • 1 1/2 cups carrots, chopped coarsely
  • 1 cup green pepper, chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 2 teaspoons mild chili powder
  • 1 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1 teaspoon Mrs. Dash salt-free seasoning blend
  • 1 1/2 pounds very lean ground turkey breast
  • (1) 28 ounce can diced tomatoes, in juice, no salt added
  • (1) 15 1/2 ounce can kidney beans, drained and rinsed
  • (1) 15 1/2 ounce can chickpeas, drained and rinsed
  • 1 bunch fresh cilantro, chopped

In an 8 quart stock pot, heat oil and sauté garlic and onions for approximately 5-10 minutes, until onion is translucent and golden. Add celery, carrots, peppers and seasonings and continue to sauté another 5 minutes.

Add ground turkey to vegetable mixture and mix thoroughly. Continue cooking until turkey is browned and cooked through, approximately 10-15 minutes.

Add diced tomatoes and tomato puree to turkey mixture and continue cooking approximately 10-15 minutes. Add drained beans and mix thoroughly. Garnish with fresh cilantro.

Servings: approximately 8

Note: Chili can be prepared in advance and frozen for future use.
