This tasty spinach pie is perfect for lunch or a light meatless dinner, with a garden salad or bowl of soup. Low in calories and saturated fat, and a great source of protein and vitamin A
Preheat oven to 350° F. Heat olive oil in non-stick sauté pan and sauté garlic and onion until onion is golden; set aside.
In large bowl, combine eggs, egg whites, cottage cheese, spinach, onion and spices and mix thoroughly.
Pour mixture into lightly oiled 10″ round quiche or pie dish. Sprinkle evenly with Parmesan cheese.
Bake for 50-60 minutes or until browned and set. Cut into wedges and serve.
