Spinach Pie

This tasty spinach pie is perfect for lunch or a light meatless dinner, with a garden salad or bowl of soup. Low in calories and saturated fat, and a great source of protein and vitamin A

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 10-ounce package frozen chopped spinach, thawed and squeezed dry
  • 2 whole eggs (or equivalent egg substitute)
  • 2 egg whites
  • 1 pound 1% low fat cottage cheese
  • 1/2 teaspoon salt free seasoning blend: Mrs. Dash
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated parmesan cheese

Preheat oven to 350° F. Heat olive oil in non-stick sauté pan and sauté garlic and onion until onion is golden; set aside.

In large bowl, combine eggs, egg whites, cottage cheese, spinach, onion and spices and mix thoroughly.

Pour mixture into lightly oiled 10″ round quiche or pie dish. Sprinkle evenly with Parmesan cheese.

Bake for 50-60 minutes or until browned and set. Cut into wedges and serve.
