Baked Salmon

This salmon entrée, topped with a nonfat creamy mustard dill sauce, is easy to make and will be enjoyed by the whole family. It’s diabetic-friendly, high in protein, low in calories, and an excellent source omega 3 fatty acids.

  • 1 cup nonfat plain Greek style yogurt
  • 2 teaspoons dried dill
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 1 1/2 pounds salmon fillets, skin removed, cut into 6 pieces
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • As needed, fat free cooking spray

Whisk yogurt, dill, mustard and lemon juice in small bowl to blend. Set aside.

Preheat oven to 400° F. Lightly oil baking dish with cooking spray.

Place salmon in baking dish. Sprinkle with garlic powder and pepper; then spread with sauce.

Bake salmon until just opaque in center, about 20 minutes.

Serve with Roasted Asparagus.
